Meeting All the Diet Guidelines?

Professional nutritionists had a difficult time designing menus that had the appropriate mix of calories, cholesterol, sodium, fiber and vitamins. (No wonder our patients have trouble!). In the hospital menus, zinc was particularly lacking, but vitamin B6 and iron were also. (J Am Diet Assoc. 1995; 95:341-344,347.)
